Barefoot Contessa Ina Garten has a cooking hack that you want to try for perfect crispy hash raisins. She uses a kitchen appliance that isn’t normally used to grind potatoes, but it certainly does the trick.
Ina Garten has an easy trick for making crispy brown hash
Hash browns can be easily made with just a handful of ingredients and are usually fried to get the crunchy stuff, but Garten has a hack that makes it even easier. The Barefoot Contessa uses a waffle iron that presses all sides perfectly without the need to turn oil or potatoes at the exact right moment.
She shared a picture of the crispy hash hats on her Instagram, writing the pic, “Waffle Iron Hash Browns are the easiest and tastiest hash brow you will ever make. They’re incredibly curved on the outside and surface inside – and the best part is that the stove doesn’t have splatters! ”

Garten doesn’t complain about her claim that the waffle iron can make a big brown, as Deputy Director of Food at Kitchn Grace Elkus gave Garten the genius idea a try. She was not disappointed, noting that “the cooking portion was completely useless” and quick.
“The texture of these hash browns was exactly as Ina described them – crispy on the outside and creamy on the inside,” Elkus said. “They reminded me of the perfect hybrid of home latke and McDonald’s brown hash.”
Elkus shared more suggestions, including how there may be some trial and error with the cooking time as waffle magazines change so much. She also suggested playing with the brown hash flavor image by adding different seasonings or cheeses.
She also recommended pressing the waffle iron with butter between batches and spreading the potato mixture evenly and to the edges with a fork before putting the cover down.

The Contessa barefoot brown recipe brown iron hash perfect for any breakfast or brunch spread.
- 1½ pound russet (baking) potatoes, peeled (2 large) and grated
- 1 medium yellow onion, grated
- 2 tablespoons of melted butter, plus the waffle iron
- 1 extra large egg, lightly beaten
- 1 tablespoon of whole-flowered flower
- Kosher salt and ground black pepper
Preheat waffle iron on medium-high heat. Take the potatoes using a box grater or food processor, then place the potatoes in a clean kitchen towel to squeeze out the excess water. Place the potatoes in a mixing bowl. Repeat the grating and squeezing process with the onion. Combine the potatoes, onion, butter, egg, flour, 1½ teaspoon salt, and ½ teaspoon pepper, mix with a fork.
Cook each side of the waffle iron with melted butter and then spread the potato mixture on the iron. Cook for 5 to 10 minutes until browned and crispy. The brown hash can be kept warm on a sheet pan lined with parchment paper in a 250 degree Fahrenheit oven as you make the remaining batches. When ready, sprinkle the brown hash with salt and serve.
